If the chicken breasts are frozen, ensure to thaw thoroughly before seasoning your chicken. You can leave them out on the kitchen counter overnight or in the morning if it will be served for dinner or lunch.
Try to use organic chicken from your local farmer’s market.
Do not add any extra cooking oil to the bacon fat when browning the chicken. It is also extra flavor on the chicken. However, if you do not want to use the bacon fat, substitute with a ¼ cup of extra virgin olive oil.
Add some spices if you like it hot. It is great for the metabolism. You can add some pepper flakes to the honey mustard sauce too.
If you do not have an oven, place the chicken in a microwave until the cheese melts completely
If you are watching your weight, use less salt, and add fresh herbs like thyme, rosemary to ramp up the flavor.
The corn syrup is optional if you like the tang of the mustard. Any kind of mustard is excellent; we love the grainy type for some texture.
You can change the cheese if you do not like jack/Colby but ensure you pick a cheese that melts.
