If you’re in search of a side dish that’s both comforting and indulgent, look no further than this Bacon Cheese Potato Au Gratin recipe. It’s a classic dish that’s been elevated to a whole new level of decadence.
Scalloped potatoes are a beloved side dish for good reason. The thinly sliced baby potatoes, smothered in a creamy, golden sauce, are a dreamy addition to any meal. And with this recipe, you have two options for making them: a slow cooker method or an Instant Pot version.

If you want the gratin potatoes to be more golden, turn on the broiler in the oven for a couple of minutes at the end of the cooking time. Watch them carefully so they don’t get too dark.
You can change the cheeses in this recipe if you like, a mild cheddar, mozzarella, gouda or fontina all work well in place of the gruyere.

Fresh thyme can be substituted for 2 teaspoons of dried thyme.
These potatoes will keep covered for up to 3 days in the refrigerator. To reheat them, cover them with foil and bake at 325F for about 25 minutes, until heated through.
Gratin Potatoes with Cheese and Bacon
Preheat oven to 350F. Grease an 8 × 8-inch baking dish. Set aside.
In a small saucepan, over medium heat, melt the butter.
Add the onions, garlic, and thyme and cook for about 3 minutes, until the onions are tender. Set aside.
Place 1/3 of the potato wedges in the bottom of the prepared baking dish. Season with a pinch of salt and pepper.
Spoon half of the onion mixture evenly over the top of the potato layer.
Sprinkle half of the bacon evenly over the onion mixture.
Sprinkle half of the grated Gruyere cheese over the bacon layer.
Repeat these layers.
Arrange the remaining 1/3 of the potatoes evenly on top.
Pour the cream on top. Cover with aluminum foil and bake for 1 hour.
Uncover and place brie slices on top of potatoes. Cook for a further 30-35 minutes, until the brie has melted and the potatoes are tender.
Serve sprinkled with chopped fresh parsley if desired.
