Step 2: Cook the Potatoes

Cook for about 5-7 minutes, stirring occasionally, until the potatoes start to soften and develop a golden-brown crust. The goal is to get the potatoes crispy on the outside while keeping them tender on the inside.
Step 3: Sauté the Onions and Garlic
Once the potatoes are golden, add the sliced onion to the pan. Stir and let it cook for about 2 minutes until the onions start to soften. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
Step 4: Add the Zucchini and Spices
Next, add the sliced zucchini to the pan with the potatoes and onions. Sprinkle the oregano, paprika, salt, and pepper over the vegetables. If you like a bit of heat, add the crushed red pepper flakes at this point. Stir everything together and cook for an additional 5 minutes, until the zucchini is tender but still holds its shape.
