Ingredients
- 2 medium potatoes, peeled and thinly sliced
- 1 large zucchini, sliced into half-moons
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried oregano (or thyme)
- 1/4 tsp chili flakes (optional, for heat)
- 2 tbsp grated Parmesan cheese (optional, for garnish)
- 1 tbsp fresh parsley, chopped
One of my fave ways to eat this dish!
