1️⃣ Prep the Pan & Preheat Oven
- Preheat oven to 150°C (300°F).
- Line an 8-inch round cake pan with parchment paper and wrap the outside with aluminum foil to prevent water leakage from the water bath.
2️⃣ Melt & Mix
- In a heatproof bowl, melt cream cheese, butter, and milk over a double boiler until smooth.
- Remove from heat and let it cool slightly.
3️⃣ Combine Dry Ingredients
- Sift together cake flour, cornstarch, cocoa powder, and salt.
- Gradually add the dry ingredients into the cream cheese mixture, whisking until smooth.
4️⃣ Prepare the Meringue
- In a clean bowl, beat egg whites with cream of tartar until foamy.
- Slowly add sugar and beat until soft peaks form.
5️⃣ Fold & Blend
- Add the egg yolks and vanilla extract into the cream cheese batter.
- Gently fold in the meringue in three parts, being careful not to deflate the batter.
