Directions:
1. Preheat oven to 180°C (350°F) or 200°C (390°F) for non-fan electric ovens.
2. Drizzle 1 tablespoon of honey over each puff pastry sheet.
3. Evenly scatter blue cheese, Parmesan cheese, walnuts, pitahaya, and raspberries over each sheet. Top with thyme leaves and season with sea salt and cracked pepper.
4. Roll each pastry sheet tightly, then cut in half lengthwise. Tuck the edges to secure the filling.
5. Twist each pastry strip and coil into spirals. Place on a baking tray lined with parchment paper and brush with milk.
6. Bake for 25-30 minutes, until puffed and golden brown.
7. Garnish with extra thyme and raspberries before serving warm.
