Step 2: Prepare the Puff Pastry

2️⃣ Roll out the puff pastry sheet on a lightly floured surface to ensure it’s about ¼ inch thick. If you’re using store-bought puff pastry, it should already be pre-rolled, so just make sure it’s flat and smooth.
3️⃣ Cut the pastry into rectangles or squares, depending on the size you want your pockets. Each piece should be about 4 inches by 4 inches (or larger if you prefer).
