1. Prepare the Chicken
Season the chicken thighs with BBQ rub, salt, and pepper.
Preheat a skillet or grill pan over medium heat. Cook the chicken for 5-7 minutes per side, until cooked through and lightly charred. Remove from heat and let rest for 5 minutes, then cut into bite-sized pieces.
2. Cook the bacon
Cook the bacon until crispy and place on a paper towel-lined plate to drain off excess fat. Cut into pieces once cooled.
3. Prepare the filling
In a mixing bowl, combine the chopped chicken, crispy bacon, and ranch dressing. Mix until well coated.
4. Prepare the subs
Lightly toast the sub buns in the oven or on a grill.
Top each bun with lettuce, tomato slices, and the chicken-bacon-ranch mixture.
Sprinkle mozzarella cheese on top.
