Ingredients
- 1-1/2 cups water
- 1-1/2 cups uncooked instant brown rice
- 1 tablespoon olive oil
- 1 medium green pepper, diced
- 1/2 cup chopped onion
- 1 teaspoon minced garlic
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/8 teaspoon crushed red pepper flakes
- 1 can (15 ounces) black beans, rinsed and drained
- 10 flour tortillas (8 inches), warmed
- 1 cup salsa
- Optional: Avocado slices or guacamole, lime wedges, vegan sour cream, additional salsa
