Cheesy Corn Fritters
Ingredients:
1 cup all-purpose flour
1/2 cup cornmeal
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp black pepper
1/4 cup grated Parmesan cheese
1/4 cup chopped green onions
1/2 cup corn kernels (fresh or frozen)
1 large egg
1/4 cup milk
1/4 cup vegetable oil for frying
grated cheddar cheese for topping (optional)
Instructions:
In a medium mixing bowl, combine the flour, cornmeal, baking powder, salt, pepper, Parmesan cheese, and green onions.
Stir in the corn kernels, egg, and milk until well combined.
Heat the oil in a large skillet over medium-high heat.
Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil.
Fry the fritters for 2-3 minutes per side, or until golden brown and crispy.
Remove the fritters from the oil with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
If desired, sprinkle grated cheddar cheese over the fritters while they are still hot.
Serve the fritters hot with your favorite dipping sauce. Enjoy!
